What’s On Your Fork? Event Report

What’s On Your Fork? brought together the five congregations of the West Metro Climate Hub (Bet Shalom Congregation, Edina Community Lutheran Church, Excelsior United Methodist Church, Plymouth Presbyterian Church, St. Luke Presbyterian Church, and Unitarian Universalist Church of Minnetonka) at St. Luke last Thursday. We began with a blessing from Kristin, followed by a chef-prepared vegan meal with beany chili, a crisp green salad, corn muffins, and chocolatey cookies.

After dinner, we moved to the sanctuary where we learned from our five panelists (three from Hennepin County) about how our food choices affect climate change, food insecurity, and food waste. We also learned that the HERC (Hennepin Energy Recovery Center) is a climate justice site exacerbated by our food waste, which is polluting the air in North Minneapolis and making people sick. Our panel left us with action items and new ways to think about what we choose to eat. Some takeaways:

  • Retrain ourselves and inform others;

  • Renewed awareness of the need to pressure for HERC closure;

  • Recycling helps but still wastes the energy it took to produce the good;

  • The clear climate impact of food choice, an excellent panel;

  • What Hennepin County is doing for public health;

  • How much of our food production goes toward animal production;

  • A simple step to help is to eat less meat.
